365 things to Do in Colorado Springs ~ Day 65 Dinner at the Blue Star

The Blue Star Restaurant in Colorado Springs has received rave reviews since opening in 1995. The restaurant’s creator describes it as innovate and cosmopolitan, and I could not agree more. The Blue Star takes traditional dishes like steak, and make it something more wonderful than other classic steak houses around town.  Driving up for the first time the building looks deceiving from the outside with its bare concrete walls & simple architecture.

 

What makes it innovative is the way the menu changes every month. At first this annoyed me because I’d found my favorite and wanted to have it again, only the next time I went it was no where to be found.  I am happy to report however that they now have a cookbook for sale full of Blue Star favorite appetizers and entres.  


I had to find a new favorite. What’s great about this restaurant is you can not have a bad dish, and it forces you to evolve your taste buds beyond the “one favorite or go-to dish”.  What makes the Blue Star cosmopolitan is the lighting, the mood, the way tables are arranged to make you feel like you are practically in the kitchen by the chefs and your food, or the wonderful dining experience in a wine cellar. You can’t get that at most restaurants in town which makes this restaurant just a little bit more than others.

 

The wine list at the Blue Star is extensive, and again, you can’t have a bad glass or bottle of wine here. The waitstaff are friendly, hospitable, and full of knowledge about the food, wine, and where everything came from (and prepared). If you have special dietary needs, they don’t bat an eye. The arrangement of food may make it feel a little more progressive, cosmopolitan, “Denver” I’ve heard said, but this place should not be reserved for only special nights out. With a bar menu that is more affordable than the dinning room menu, there’s no reason you couldn’t go here more often and enjoy a more sophisticated menu and atmosphere.
