365 Things to Do In Colorado Springs ~ Day 56 Dining at Carlos Bistro

Carlos’ Bistro in Colorado Springs is one of those amazing places no one wants to share or talk about for fear of never getting a table at again or having to wait two hours for. I had dinner here last week and it was absolutely wonderful.  What makes an evening memorable is not only a great meal but the people, conversation, environment and presentation.

From the moment you arrive customer service is none like any other in the state. Carlos himself will meet you at your door, open the door for the passenger, and help them out by lending a hand. He walks you to the front door, holding it open and handing you off to the hostess if she is not with another table or to a bartender to entertain you until the hostess is available. Once seated, the waitstaff sees to your every wish without the attitude. Carlos again will check up with you at some point during your appetizer or meal to ensure everything is to your liking, and I suppose if it wasn’t he would correct it immediately. I say suppose, because I’ve never not liked anything that has come out of that kitchen. It is simply divine. At the end of the meal, Carlos will again open the door for you on the way out and walk you to your vehicle.

The scallops (I know what you are thinking, seafood in a landlocked state does not mix, but in this case you are wrong), are simply amazing. If only I could cook them that well! The sauces, salads, dressings, appetizers, desserts, it’s all a winning combination! Carlos’ Bistro also serves up delectable lunches, and while a bit pricey, is a great place for a business lunch or to try it out before putting it on your Date Night list of places to go.

Be sure to leave room for desert because their desert menu is vast & mouth-watering.  At least get something with "multiple spoons" for all to share.
